Did a quick Google search and found the following guide in the Steam community on how to downgrade to whichever version of the game you'd like. Update is always a downgrade.. I mean the procedure is simple, after every update you download previous version with Beat Saber Legacy and keep playing with all your mods until everything is fixed on new version so you can move on to it. That or manual backup is the only way to enjoy the game any time you want independent of the updates.
